"Modern equipment makes life easier now. We also have more advanced and better ingredients which help John Chalmers, Baker with better products and shelflife. Some things are the same though; unsocial hours, manual dough handling, and we still use an oven which is well over 100 years old.

We try very hard to have little effect on the environment with a constant watch on packaging and disposable containers. Also we watch our waste disposal and more energy efficient means of transport. Hygiene is very important and the risk of foreign bodies getting into products. Changing legislation causes a headache as it takes up more time and is very costly."
